basil citrus salad
SERVES 4 POINTS 2
2 medium oranges
1 medium grapefruit
285g (10oz) bag mixed salad greens
1 medium onion, sliced
2 medium carrots, julienned
40g (1 ½oz) walnuts, toasted
Dressing
1 ½ teaspoons olive oil
1 tablespoon raspberry vinegar
25g (1oz) basil leaves, shredded
1 clove garlic, minced
¼ teaspoon salt
1/8 teaspoon pepper
Note: You can add goat cheese for a
creamy, tart flavour to this salad, but remember to add the extra Points
Using a
serrated knife, remove the peel from the oranges and the grapefruit. Section
the fruit over a bowl to collect juices. Reserve 50ml (2fl oz) of the juice.
In a large
bowl, combine the fruit with the remaining salad ingredients.
In a separate bowl whisk the dressing ingredients
with the reserved fruit juice until well blended. Pour over the salad. Toss
well before serving.
