Nutty Liver

90g liver, sliced
1 small carrot, cut into julienne strips
120g leeks, chopped
1 tbsp peanut butter (3½pts)
1 tbsp soy sauce
2 tbsp water
Heat a large non-stick pan and spray with frylight.
Add the liver strips and stir-fry for 1 minute. Add the veg and stir fry until
they are tender. Stir in all the remaining ingredients, making sure the
peanut butter is thoroughly mixed in, and adding more water if necessary.
Serve with rice or pasta adding the points as necessary.
