Liver Scrumpy

Liver Scrumpy

Serves 1

Core recipe*

Points plan 6 per serving (original points)

2 tbsp sweet cider
2 shallots, sliced
1 rasher lean back bacon, fat removed & diced
75g pig's liver, cut into strips
1 small red eating apple, cored & sliced
50g mushrooms, sliced
50g spring cabbage, shredded
2 tbsp low fat plain fromage frais
2 tsp wholegrain mustard
1 tsp cider vinegar
salt & pepper

Place 1 tbsp cider in a pan with the shallots and cook for 1 min.

Add liver and cover and cook for 4 mins, stirring occasionally.

Add the apple slices, mushrooms and cabbage and cook 3 mins, stirring occasionally.

Mix together the remaining cider, fromage frais, mustard, vinegar and seasoning.  Add to liver mixture & mix well.


Serve immediately.


*Cider is not a core food so you must count points for it.  2 tbsp cider works out at 0 pts.  If you prefer, count ½ pt when having this recipe
