Feta and Pasta Stuffed Peppers
Serves 2
4 points per serving (original points)
2 red peppers, halved and de-seeded
1 tsp oil
1 clove garlic crushed
1 onion, chopped
1 courgette, chopped
1 tsp dried oregano
2 tbsp pine nuts
40 g feta cheese, crumbled
50 g small pasta shapes, cooked
1 tomato chopped
salt and pepper
Fry the onion and garlic in the oil for about 5 mins until soft.
Add the remaining ingredients and stir through. Spoon into the pepper halves
and cook in the oven at 200ºC/ Gas 6 for about 20-25 mins until the peppers
are tender and filling is golden
