Raspberry Breakfast Muffins

200g self raising flour 17
50g Oats 5
4 tbspn soft brown sugar 7
2 eggs 4
2 apples, grated
Cinnamon to taste
150g fat free yogurt 2
frozen raspberries
In a bowl, put the flour, sugar, oats, cinnamon in a bowl and stir to combine.
Add the eggs, yogurt and grated apples (I use cooking apples to get more flavour!) and mix.
Place about a tablespoon of the mixture into each muffin case, then place 2-3 raspberries in each.
Top with the remaining mixture.
Sprinkle a pinch of oats on top of each muffin, then bake in the oven for 25 minutes at 180 degrees, or until well risen and golden.
Make sure they are completely cool before eating as the raspberries inside can go a bit molten!
These work out at 3pp each! Enjoy!
