As the title suggests, this is quiche without the pastry. It's a recipe widely used at Slimming World clubs but it fits in beautifully with the filling and healthy plan.
Basic recipe
4 eggs
1 large tub cottage cheese
Into a dish, (I use a square pyrex dish) put any vegetables you fancy in your quiche. Mushrooms are good if you are going to eat this at breakfast time.
Bacon medallions chopped up, or chopped ham are also good for a breakfast quiche.
Beat the eggs with the cottage cheese and seasoning. Pour over the ingredients in your dish. Top with tomato slices if you like.
Bake at 190ºC or Gas 5 for approximately 30 mins until it is set.
Variations
You could add cooked brown rice or pasta and herbs/spices to this, for a Savoury rice or pasta quiche.
Try cooked chicken and bacon (medallions) or ham in your quiche or
Cooked salmon fillet and brocolli or smoked ham and leek or tuna.
Sweet Quiche
It occurs to me that this could be good with fruit in.
Put your fruit into the dish......try drained tinned pineapple or fresh plums, stoned and quartered.
Add sweetener to the egg mix before pouring over an cooking as for the savoury quiche.
