4oz self raising flour
8 fl oz skimmed milk
3 eggs
pinch of salt and pepper to taste
Fry-Lite spray

Pre-heat the oven to 200 deg C/gas mark 6.

Beat the eggs in a bowl, sieve the flour in and add milk and seasoning.

Then whisk like your life depends on it. Once smooth and light place the mixture in the fridge for an hour.

Spray a 12-portion pudding tin with Fry-Lite and place in preheated oven for 5mins.

Remove the tray from the oven and quickly pour the batter into the tin. Bake for 30 minutes until golden and risen.
