Stuffing

Stuffing for Pork

Core recipe
Points per recipe: 8

2oz couscous
1 veg oxo
2 tsp dried herbs
1 small onion chopped
1 med eating apple diced
1 Large tin prunes stoned + roughly chopped
Frylite

Add crumbled stock cube and herbs to dry couscous and re-hydrate as per packet instructions. Cook onion in frylite and add with rest of ingredients to couscous mixture.
Grease  1 x 7 to 8 inch sandwich tin with frylite and put in mixture and bake 25-30 mins at about 200 Deg C.

Irish Potato Stuffing

Serves 6-8

4 Large Potatoes, peeled and cut into chunks
1 large Onion, chopped
2 large Cooking Apples, roughly chopped
1 tbsp Freshly chopped Sage
1 tbsp Freshly chopped Thyme
1 tbsp Freshly chopped Parsley
Salt and Black Pepper

Preheat the oven to 180C, 350F, Gas Mark 4 and spray a shallow ovenproof dish with Frylight. Place the potatoes in a large saucepan , cover with salted water and bring to the boil. Reduce the heat slightly and cook for 20-25 minutes until just tender.

Drain the cooked potatoes, return to the pan   and roughly mash. Do not make it too smooth.Add the remaining ingredients to the potato and mix well.

Transfer to the greased dish and bake for 30 minutes. Serve with Roast meat or poultry.
