Dosas : Indian Breads

Dosas are the breads of Southern India, very different from naan, they are more like pancakes, eaten freshly cooked. This recipe has not been adapted.

Makes 6

Core if brown rice used

5 oz rice
2 oz red lentils
250 ml warm water
1tsp salt
1/2 tsp ground turmeric
1/2 tsp black pepper
2 tbsp chopped coriander
spray oil for frying

Place rice and lentils in a bowl, cover with the warm water. Leave for 8 hours.

Drain (AND KEEP) the water. Blend the rice and lentils in a food processor until smooth. Stir in the reserved water. Put in a bowl, cover with cling film and leave in a warm place to ferment for 24 hours.

Stir in salt, turmeric, pepper and coriander.

Spray oil pan. Heat until hot. Add about 2-3 tbsp batter

Using the rounded bottom of a soup spoon, gently spread the batter out in a circular motion to make a dosa about 6 inch diameter

Cook 1-2 mins until set. Spray, turn over, cook for 1 more minute until golden. Serve warm.
