Steak & Ale Pie

1 kg lean
stewing steak
2 baby leeks,
finely chopped
2 garlic
cloves crushed
2 tsp finely
chopped fresh thyme
600ml beef
stock
2 tbsp plain
flour (2 pts)
300ml brown
ale (1½ pts)
675g
potatoes, peeled
2 tbsp
virtually fat free fromage frais
2-3 tsp mild
coarse grain mustard
1 tbsp
chopped fresh chives
salt &
pepper
Preheat oven
to 200ºC/400ºF/Gas 6
Preheat a non
stick pan. Add the beef and brown quickly on all sides over high
heat. You may have to do this in batches. Add the leeks, garlic
& thyme, stirring well. Reduce the heat and add 3 tbsp
stock. Sprinkle the flour over, stir quickly. Cook for 1 min to allow the
flour to cook out, then gradully mix in the rest of the stock. Add the ale and
chives, bringing the meat to a gently simmer. Cover & simmer for 40
mins until the meat is tender.
Meanwhile
boil the potaotes in a pan of salted water until well cooked. Drain &
mash well, until smooth. Add the fromage frais, mustard & seasoning.
Using a
slotted spoon, place the meat in the bottom of a large ovenproof dish.
Cover with the potatoes. Bake for 30-40 mins until golden.
Boil the
remaining juices to reduce slightly and serve with the pie.
