Italian beef & Vegetable Cobbler
Core recipe
1 pack lean minced beef
2 cloves of garlic chopped
1 onion chopped
1 leek chopped
1 courgette chopped
1 carrot diced
half red and half yellow pepper chopped
4 oz mushrooms sliced
Jar passatta
2 Italian Oxo cubes
chopped basil & corriander
salt & pepper
1 pack ready made polenta
mixed herbs
Dry fry the vegetables and mince, add the passata, oxo, herbs and some water and simmer for 15 minutes. Pour into a large casserole dish.
Slice the
polenta into about ½” slices and arrange on the top. Spray Fry light over the top and sprinkle a
few mixed herbs over.
Bake it for
30 minutes in a hot oven.
