Roasted Squash with Feta

Serves 2

Points per serving 4

butternut squash
red onion
button mushrooms
dried thyme or oregano
100g feta cheese
baby spinach leaves
balsamic vinegar
rock salt
spray oil


chop squash into 1 inch cubes, halve mushrooms, chop onion in to large pieces
place on flat metal baking sheet, spray with oil, sprinkle with herbs and rock salt
bake in preheated hot oven (around 220) for about 40 minutes until the squash is going a little brown. give it a shake halfway through. It smells delicious.
chop the feta into smallish chunks.
mix it all together, drizzle with balsamic vinegar and pile on top of baby spinach leaves.
