Stilton Mushrooms

Stilton Mushrooms

Serves 2
3 pts per serving

1lb Mushrooms
1 chopped red onion
2 cloves garlic
4 tomatos (chopped and Peeled)
2oz stilton
frylight
Chop garlic with salt to bring out full flavour.

Put onion, tomato and garlic in ovenproof dish. Top with mushrooms (flat ones work best).

Spray with frylight and put in moderate oven for 15 minutes.

Take out and top with stilton. Return to oven for 10 mins. or until stilton is melted.

Eat with salad for light meal or with new potatos and salad as main meal. Works well with Brie as well.
