Portuguese Rice

Portuguese Rice

Serves 4

Core points per recipe: 1 (if using the sultanas)

350g brown long grain rice
frylight
1 onion, peeled & chopped
1 clove garlic, crushed
225g lean back bacon, chopped
1 tbsp Tabasco sauce (or to taste)
150 ml beef stock
2 tbsp soy sauce
25g sultanas (optional)

Wash & rinse rice.  Place in lightly salted boiling water and cook for 4 mins.  Drain and leave to dry.  In a large non-stick pan or wok, spray with frylight and fry onion, garlic and  bacon until browned.  Add Tabasco sauce and stir thoroughly.  Add rice and stir to mix.  Pour over stock, and add sultanas.  Cook on low heat until stock is absorbed and rice is tender.  Season & serve.
