Gammon Stir-fry with Potato &
Apple

800g potatoes,
peeled and cut into thick chips (9pts)
2 tbsp olive
oil (5pts)
350g lean
gammon steak, cut into strips (12½pts)
2 Cox's
apples, cored & sliced (1pt)
1 large leek,
washed & diagonally sliced
1 tbsp honey
(1pt)
sprig of
rosemary or ¾ tsp dried
150 ml hot
veg stock
Parboil potatoes
for 5 mins then drain.
Heat half the
oil in a large pan or wok and fry the gammon strips for a few minutes, then add
the potatoes and continue to fry until lightly browned. Remove to a
plate.
Add remaining
oil to pan, add apples and leeks and fry until just softened and lightly
browned. Return gammon and potatoes to pan, add honey, rosemary and
stock, heating through and tossing all of the ingredients together.
Serve
immediately with green salad.
