Mediterranean-Style Cottage Pie

Mediterranean-Style Cottage Pie

Serves 4

Core points per recipe 4

700g potatoes, peeled
450g lean minced beef
1 onion, peeled & sliced
1 tbsp flour (1pt)
3 tomatoes, chopped
4 anchovies from a can, drained & chopped
100ml beef stock
3 sun dried tomatoes, chopped (not ones in oil), soaked in hot water to plump
fresh basil

Preheat oven to Gas 5/190ÂșC.  Cook the potatoes in boiling salted water until half cooked, about 8 mins.  Drain, run under cold water to cool then grate into a bowl.

Fry the mince & onion until golden, about 10 mins, stir in the flour, tomatoes and anchovies, followed by the stock. Bring to the boil, season and pour into an ovenproof dish.

Scatter over the grated potato and drained, sun dried tomateos.  Spray with frylight oil and cook in the oven for 20 mins until golden & crispy.

Garnish with basil & serve.


Note: Could use quorn mince or lamb mince, or could do just veg such as aubergine, courgettes & peppers topped with the potato.
