Meatloaf with Spinach

775g extra
lean minced beef
1 large
onion, finely chopped
1 red pepper,
finely chopped
50g fresh
breadcrumbs
2 tbsp
worcestershire sauce
2 tsp tabasco
sauce
450g frozen
leaf spinach, thawed
1 tsp grated
nutmeg
2 small
onions sliced into rings
frylight
Mix mince,
onion, pepper, breadcrumbs, worcestershire sauce and tabasco and season.
Spread mixture out onto non-stick baking paper to form a rectangle 8 x 14
" (20 x 35cm).
Drain spinach
and squeeze to remove excess liquid. season with nutmeg and spread over
mince to within ½" (1.2cm) of the edge. Roll up meatloaf from the
short edge, easing away the baking paper.
Put into a
lined 2lb (900g)loaf tin, sprinkle with the onion rings and spray with frylight.
Cover with foil and cook at 375ºF/190ºC/Gas 5 for 1 hour.
Remove foil,
spray again with frylight and cook uncovered for a further 30 mins. Serve
hot with fresh vegetables & gravy.
