Beef Hotpot

lean stewing steak, cubes

onions, chopped

carrots, chopped into semi-circles

parsnips, chopped into semi-circle
4 small
swedes or turnips
bunch of
fresh thyme or 4 sprigs of rosemary, chopped
400g tin
chopped tomatoes
2 tbsp tomato
puree
100 ml (3½ fl
oz) red wine (optional)
salt and
pepper
Heat a large
casserole dish and spray with low fat cooking spray then brown and season the
beef. Remove and set aside.
Add the
onions and garlic to the casserole and cook for 4 minutes until softened.
return the
beef to the dish with the carrots, parsnips, swede/turnips, herbs, tomatoes,
tomato puree, red wine (if using), seasoning and enough water to cover.
Bring to the
boil, cover and simmer for 1 hour or until thick and rich.
