Lamb Koftas
and Yogurt Dressing

1 tbsp ground
coriander
Small handful
fresh coriander
1 onion
peeled and finely chopped
2 garlic
cloves crushed
1 tsp ground
cumin
500g minced
lamb
1 large egg
lightly beaten
Put all the
ingredients into a bowl and mix well.
Divide and
roll the mixture into 24 egg shapes, then thread onto 8 skewers.
Cook for
about 15 mins under a hot grill turning regularly until cooked through (about
5-7 mins in a George grill, or 15 minutes on a barbecue )
Serve with
pitta bread (2½ pts each) or rice and salad and a wedge of lemon
Dressing
200g low fat
plain yogurt
½ cucumber
with the seeds removed from the centre and roughly chopped
bunch spring
onions finely chopped
2 tbsp
freshly squeezed lemon juice
2 tbsp dried
mint
salt and
pepper to taste
Mix
ingredients together, leave covered in the fridge for a few hours before
serving.
