Moroccan Spicy Grilled Lamb Chops with Chick Pea Puree
Serves 4
4 Lamb chump
chops fat removed
salt &
ground black pepper
2 tsps.
Ground
paprika
½ small onion
for cucumber
salad
5 oz VLF
natural yoghurt
½ cucumber
diced
for chick pea
puree
1 clove
garlic
crushed
1 tbsp.
Chopped parsley salt & black pepper
14oz can
chick peas
drained
1 tsp each of
ground coriander & ground cumin
For salad mix
the yoghurt with cucumber & season, chill in fridge until required
For chickpea
puree, put chick peas, garlic,spices & parsley in a blender and process
until mushy
If puree is
to thick you can thin with a little water, season and set aside in a cool place
Cook the lamb
chops on a health grill for about 10 mins until cooked and crisp outside but
still juicy inside, sprinkle with, paprika and onion, serve immediately with
cucumber salad a chickpea puree
