Lamb Steaks

2 medium red
onions
2 garlic
cloves
2 tbsp lemon
juice
4 medium
tomatoes
a few sprigs
of fresh rosemary
4 x 150 g lean
lamb steaks trimmed of fat
salt &
pepper
Preheat oven
to Gas 4/180ºC/350ºF Peel the onions and garlic. Slice the onions
into wedges and toss in the lemon juice. Thinly slice the garlic.
Remove the stalks from the tomatoes and cut into quarters.
Arrange the
onions, garlic and tomatoes in the base of a lidded casserole dish and
sprinkle with rosemary.
Arrange the
lamb steaks on top of the veg, cover with a layer of foil then the casserole
lid. Bake for 1½ hrs or until very tender.
Drain and
serve garnished with fresh rosemary and accomanied by fresh veg or a green
salad.
