Lamb in Red Wine

Lamb in Red Wine

Points per serving 4½ full choice

For no count: 1 pt per person

900g lamb fillet
spray oil
1 large onion, chopped
3 sticks celery,sliced
4 carrots, sliced
2 cloves garlic,crushed
2 tbsp plain flour (2pts)
450ml lamb stock
300ml red wine (3 pts)
2 tbsp fresh oregano
salt and black pepper
400g can chopped tomatoes

Preheat oven to 180*C/gas mark 4/fan oven 160*C. Cut lamb into chunks and remove any fat.Spray a casserole dish with oil, add lamb and fry for 5 mins. Add onion, celery, carrots and garlic, fry for 3 mins. Stir in flour and cook for 1 min. Blend in stock and wine and bring to the boil. Remove from heat, add the tomatoes, oregano and seasoning. Cover and bake for 1 hour 30 mins or until the lamb is tender.

Notes
Serve with pasta or potato of your choice remembering to add on the points.
