Greek Chicken Escalope with Feta

2 150g Chicken Breasts
100g 0% Greek Yogurt.
1 Clove of Garlic finely chopped.
Mint and Oregano (dried is fine).
30g Half-fat Feta Cheese.
1. Beat the chicken breasts between two
pieces of cling film to make escalopes.
2. Combine yogurt, herbs and garlic.
3. Paste the combination onto both sides of the chicken and marinade in a shallow bowl for 30 minutes.
4. Cook the chicken under a very hot grill for 2 - 3 minutes per side. Spoon on any excess marinade on turning.
5. When cooked crumble the Feta over the escalopes and grill for a little more; until the cheese begins to melt.
6. Remove and serve.

This delicious light dish is great
serves with a green salad, sprinkled with fresh mint or basil leaves, and sweet
vine tomatoes.
