Citrus Chicken Casserole

Citrus Chicken Casserole

Microwave recipe

Serves 4

Points: 4 per serving
Core: 1 pt per serving (flour & walnuts)

1 tbsp olive oil
1 bunch spring onions, sliced
1 yellow pepper, thinly sliced
pinch ground cayenne pepper
1 tbsp flour
grated rind and juice of 1 orange
grated rind and juice of 1 lemon
25g walnut halves
4 chicken breasts, skinless and boneless
salt & pepper

Heat oil in a large casserole and heat on High for 30 secs.  Add spring onions, pepper and cayenne and cook on high for 4 mins until veg are soft.  Stir in the flour, grated rind and juice of the lemon and orange and the walnuts.  Arrange chicken breasts on top with the thickest part to the outside of the dish.  Cover with pierced cling wrap and cook on high for 10-12 mins until chickenis cooked, turning chicken twice during cooking.  Season and stand 10 mins.

Tested in a 650 watt microwave oven.  Adjust timings accordingly.


Serve with rice & salad.
