Thai Spicy Turkey

Thai Spicy Turkey

Serves 4

Points per serving 3

Core recipe

2 tsp stir fry oil (or olive oil)
480g minced turkey
1 small onion, finely chopped
2 celery sticks, finely sliced
1 red pepper. deseeded & sliced
1 tsp thai seven spice powder
2 tbsp soy sauce
salt & pepper
about 12 iceberg lettuce leaves
a few fresh basil leaces
4 tsp sweet chilli sauce (optional)

Heat oil in a wok or large pan.  Add the mince and stir-fry over high heat intil beginning to brown, about 6-8 mins.
Add onion, celery & red pepper.  Stir-fry 4-5 mins
Add Thai seven spice powder and soy sauce.  Stir well then season with salt and pepper.

Arrange the lettuce leaves on 4 serving plates, spoon the mixture into the leaves.  Scatter with basil leaves and drizzle with chilli sauce if using.  You can roll up to enclose the mince or leave them open.
