Gammon with Smoky Barbecue sauce

Gammon with Smoky Barbecue sauce

Serves 4

Core points per serving:  ½pt  
Points : Gammon is 3½pts per 100g raw weight, the sauce is ½pt per serving.

4 lean gammon steaks or chops

Sauce:

frylight spray
1 med onion, chopped
1 clove garlic, crushed
1 x 400g can chopped tomatoes
2 tbsp red wine vinegar
1 tbsp lemon juice
2 tbsp tomato puree
2 tbsp dark soft brown sugar
2 tbsp Worcestershire sauce
2 tsp mustard powder
½ tsp chilli powder
salt & pepper

Cook the gammon steaks: grill or on the George.

Spray a pan with frylight, add the onion and garlic and cook for 5 mins until softened.  Add the remaining ingredients and stir. Bring to the boil, reduce the heat and simmer for 10 mins, stirring ccasionally.  Serve the sauce with the steaks/chops.
