Gammon with Cranberry and Apple Glaze

Gammon with Cranberry and Apple Glaze

Serves 6

Core points per recipe: 3  
Points per 100g served: 3½

1 smoked or unsmoked gammon joint

Glaze:
3 tbsp cranberry sauce (or redcurrant jelly, same points)
2 tbsp apple puree
salt & pepper
¼ tsp ground cloves

Using a sharp knife make cuts in the bacon rind to form a diamond pattern.

Cover the joint with foil and roast according to the instructions on the pack.

To make the glaze, place all the ingredients into a pan and heat gently.  Stir from time to time to mix.

Remove the joint about 30 mins from the end of cooking time and pour over half the glaze.  leaving the foil off, return the tray to the oven for the remainder of the cooking time.  keep the other half of the glaze warm.


Transfer the joint to a warmed serving dish and pour over the remaining glaze.  Leave to stand for 10 mins before serving.
