Gammon & Apple Toastie

Gammon & Apple Toastie

Serves 4

Points per serving: 6½

8 slices bread
240g cooked gammon, sliced thinly
120g half fat Edam, grated
2 dessert apples, cored & sliced thinly
2 tbsp fat free vinaigrette
salad leaves
pepper

Preheat grill and lightly toast the bread on both sides.
Lay slices of gammon over 4 slices toast.  Top with grated Edam and return to grill until cheese just melts.  Meanwhile fry the apple slices with the vinaigreete until just beginning to soften.
Remove toasties and put on 4 plates.  Season.  Spoon over hot apple slices and any juices from the pan.  Top with remaining toast.  Cut in half and serve at once with salad leaves.
