Elderberry Chutney

Elderberry Chutney

Recipe from Unusual Preserves - by the WI, which was originally printed in 1969.

Points per recipe: approx 14

2 Pints Elderberries - no stalks (not exactly sure of the weight of these)
1/4 lb seedless raisins
1/4 lbs sugar
2 oz onions - finely chopped
1/2 oz salt
pinch of cayenne
pinch of allspice
1 Pint vinegar

Put one-third of the vinegar and all of the ingredients, except the sugar in a pan and simmer until thick. Add the second one-third of the vinegar to the pan and simmer until thick. Add the rest of the vinegar and the sugar, simmer until thick.
(Chutney is ready when no liquid is visible when a wooden spoon is drawn through the mixture). Pot and cover

Note: Could put the raisins and onions through a mincer or blitz in a food processor.
