Elderberry Chutney

Elderberries - no stalks (not exactly sure of the weight of these)
1/4 lb seedless raisins
1/4 lbs sugar
2 oz onions - finely chopped
1/2 oz salt
pinch of cayenne
pinch of allspice
1 Pint vinegar

1 Pint vinegar
Put one-third
of the vinegar and all of the ingredients, except the sugar in a pan and simmer
until thick. Add the second one-third of the vinegar to the pan and simmer
until thick. Add the rest of the vinegar and the sugar, simmer until thick.

put the raisins and onions through a mincer or blitz in a food processor.
