Coriander Minced Beef

onions, sliced thinly
250g extra
lean minced beef
2 garlic
cloves, crushed
5cm (2")
piece root ginger,grated
2 medium
green chillies, deseeded & finely chopped
1 medium red
chilli, deseeded & finely chopped
1 tbsp curry powder
2 cardamom
pods, lightly crushed
1 tsp ground
coriander
1 tsp ground
cumin
2 tbsp tomato
puree
400g can
chopped tomatoes
4 tbsp frozen
peas
2 tbsp
chopped fresh coriander leaves
salt &
pepper
Heat a
non-stick pan and spray with cooking spray. Stir fry the onions for 8
mins or until soft and brown. Add the
meat and fry for 2-3 mins until brown.
Add all the
other ingredients except the peas and coriander leaves. Heat gently until
simmering, then cover with a tight fitting lid and cook for 10 mins.
Stir in the
peas, cover and cook for 5 mins.
Season to
taste, stir in the coriander leaves and serve.
