Coconut Milk Substitute

Coconut Milk Substitute

I haven't tried this.

1 cup Fat Free ricotta (USE *substitute for No Count/Core -- see below )
½ cup. skim milk (or MORE, until desired consistency)
1 tsp. sugar (USE Splenda )
1 tsp. coconut essence

Blend in blender or food processor until SMOOTH. Use at once in any way you would use coconut milk.

Substitute for fat free ricotta: quark, extra light philadelphia, or cottage cheese blended in food processor or blender (cottage cheese only)

Points plan:

I am unsure of the quantity of cheese and milk that you would get in a "cup", so the only thing to do would be to calculate the points for each ingredient as you made this. (Fat free ricotta is not available as yet in the UK)
