Onion Bake

1 tbsp oil
1 garlic
clove, crushed
450g onions,
sliced
1 tsp veg
extract eg Marmite
225g porridge
oats
175g half fat
Red Leicester or half fat cheddar
2 tbsp
chopped fresh herbs
2 medium
eggs, beaten
salt &
pepper
100g potato,
peeled
4 tomatoes,
sliced
Preheat oven
to Gas 4/180ºC/350ºF. Grease and line a 20cm (8") sandwich tin.
Heat the oil
and cook the garlic and onions, gently for 8 mins.
Stir in the
veg extract, then remove from the heat. Brown the oats in the oven for 12
mins. Mix with the onions, cheese, herbs, eggs and seasoning.
Finely slice
the potato and use to line the base of the tin. Spoon half the onion
mixture on top, pressing down well. Top with tomato slices then more
onion mixture.
Cover with
foil and bake for 30 mins. Turn out onto a baking sheet and remove
lining. Brown top under a hot grill.
