Cheese and red pepper pate

Cheese and red pepper pate

5.5 points for the lot.

2 red peppers
1 red onion
1 garlic glove thinly sliced
50g split red lentils
300 ml veg.stock
50g low fat red Leicester

Spray oil the saucepan and add the red peppers and onion and 3tbsp of water. Cook  for 5 mins, then add stock and lentils. Simmer for 20 mins, blend and add cheese, chill for 2 hours


Lovely with celery sticks.

*Can also be made without cheese, which would make it 2.5 points.
