Black Bean Roast Beef

Black Bean Roast Beef

Serves 4-6

Core points per recipe; 1 
Points per 100g cooked:   4½

1.25kg lean rib of beef, topside or sirloin joint
2 red onions, cut into wedges
2 carrots, cut into chunky sticks
frylight
100g sugar snap peas
100g pak choi leaves
4 tbsp black bean sauce (1pt)

Preheat oven to Gas 4/180ºC/350ºF

Place beef on a rack in roasting tin and roast for the calculated cooking time:

Rare: 20min per 450g plus 20 mins
Medium: 25 mins per 450g plus 25 mins
Well done: 30 mins per 450g plus 30mins

About 40 mins before the end of the cooking time, place the onions and carrots into a roasting tin and spray with frylight.  Roast in the oven with the beef.  Around 10-15 mins before the end of cooking, add the sugar snaps, pak choi and half the black bean sauce.

Spread the rest of the black bean sauce over the beef joint and return to the oven to finish.

Carve and serve with the roasted veg and mash or a beansprout & noodle salad.
