Chinese Stir Fried Liver

Serves 4

Per serving 4

Core: count 2½ pts per recipe for seeds and honey.

1 tbsp olive oil (or sesame oil)
3 tbsp sesame seeds
1 clove garlic, crushed
1cm piece fresh ginger, peeled & grated
500g lambs liver, cut into strips
1 tbsp sherry vinegar
1 tbsp soy sauce
1 tsp clear honey
salt & pepper
1 bunch spring onions, cut into 5cm lengths
1 red pepper, de-seeded & sliced
1 yellow pepper, de-seeded & sliced
100g beansprouts
1 bunch fresh chives, chopped

Heat oil in a wok.  Add sesame seeds, garlic & ginger.  Cook 1-2 mins stirring.
Add liver & stir fry for 5 mins until no longer pink.
Add vinegar, soy sauce and honey.  Cook 2-3 mins, then season to taste.
Stir in spring onions, peppers and beansprouts.
Cook 1 min until veg are warmed but still crunchy.
Serve sprinkled with chives.


Not recommended for freezing.
