Fruity Chicken Rice

Fruity Chicken Rice


1 chicken breast, chopped
½ onion, chopped
1 pineapple ring, cut into chunks
1 veggie stock cube
½ pint boiling water
50g brown rice
½ red pepper
½ tsp ginger
salt and pepper
dash Worcestershire sauce


Brown the chicken pieces in a non-stick pan with the onions.
Add the rice, pineapple, stock cube, water and ginger, stir and simmer for 10 minutes or until rice is cooked adding more water if necessary.
Stir in pepper and add Worccestershire sauce.
 

Heat for another 2-3 minutes then serve.


You can also make it with gammon
