CHICKEN AND LENTIL CURRY
This is from an old WW cookbook, Budget Recipes if I remember rightly. It was free on no count/core, but you will need to check how it fits in with your plan now.

1 tbsp oil
1 clove garlic, crushed
1 onion, sliced
2 sticks celery, sliced
1 carrot, sliced
120g okra or 1 courgette, sliced
2 tbsp curry powder
1½ pts stock
1 tbsp tomato puree
120g lentils
4 chicken thighs or use chicken breasts chopped, or turkey
salt and pepper
Heat the oil. Fry the
onion and garlic for 3 mins. Add the
celery, carrot and okra or courgette and cook for 2 mins, stirring.
Sprinkle in the curry powder. Cook 1 min.
Pour in the stock, stir in the tomato puree. Bring to the boil, reduce the heat. Add the lentils and chicken, cover and cook
over low heat for 45-50 min, stirring occasionally.
Taste and adjust seasoning.
