Tzatziki

Tzatziki

Serves 6-8

2 large cucumbers, peeled
600ml 0% greek yogurt
2 garlic cloves, crushed
1 tbsp chopped fresh dill
1 tbsp extra virgin olive oil

Grate the cucumbers using a coarse grater and place in a colander.  Place a bowl underneath the colander and leave overnight to drain.  It is essential to remove all the juices otherwise the dip will be watery.  (You can place the grated mixture into a cloth and pull up the corners to make a tight bundle then squeeze very hard to extract the moisture if you are in a hurry)
Put the cucumber into a bowl and stir in the yogurt, garlic, dill and oil.  Season and cover with cling film and chill for about 3 hours in the fridge to allow the flavours to blend.

This can be left in the fridge for a maximum of 2 days before being used.
