Turkey Creole

Turkey Creole

Serves 4

Core recipe
Points plan: 5 per serving

1 onion,sliced
450g turkey breast strips
1 tbsp olive oil
1" (2.5cm) fresh root ginger, grated
1 clove garlic, crushed
1 x 400g tin chopped tomatoes
8 okra, sliced
4 large chillis, seeded & chopped (or to taste)
200g brown rice

Fry onion and turkey strips in oil for 5 min until turkey is lightly browned.

Add ginger, garlic, tomatoes & seasoning.  Bring to the boil, cover and simmer for 15min until turkey is cooked.

Cool, stir in okra and chillies.

Meanwhile cook rice as directed on pack.  Drain and serve with the cooked turkey & a green salad.
