Stir-Fry with Fire Cracker Rice

225g lean
beef steak, eg sirloin, cut into thin strips
2 cloves
garlic, crushed
2 tomatoes,
diced
3 tbsp (45ml)
plum sauce
1 tbsp (15ml
) tomato ketchup
Rice:
250g
precooked brown rice (use 100g dry weight,)
1 red pepper,
seeded & finely diced
200g canned
sweetcorn, drained
2 spring
onions, chopped
1 tbsp(15ml)
sweet chilli sauce
10 ml lemon
juice
In a large
non-stick pan or wok, sprayed with frylight, cook the steak and garlic until
browned, about 3-4 min.
Add tomatoes,
plum sauce and tomato ketchup and cook 3-4 mins.
Meanwhile
prepare the rice. Place the cooked rice, red pepper, sweetcorn, spring
onions, sweet chilli sauce and lemon juice into a non-stick pan or wok and cook
for 4-5 mins until hot.
