Sweet Chilli Beef

Sweet Chilli Beef

Serves 4

400g lean beef steak, cut into strips
frylight
1 tsp crushed garlic
2 spring onions, sliced
1 carrot cut into strips
2 tsp Thai red curry paste(1pt)
2 tbsp sweet chilli sauce (½pt)
80g cherry tomatoes
4 tbsp chopped fresh basil or coriander
120g dry weight egg noodles, cooked as per pack instructions

Heat a non-stick pan sprayed with frylight.  Add the beef and garlic and fry 1-2 mins.  You may have to do this in batches.  Remove and set aside.

Add onions and carrot to pan with a sprinkling of water, stirring for 2-3 mins.  Return the meat to the pan.  Stir in the curry paste, chilli sauce, tomatoes, and basil or coriander.  Add cooked noodles and toss to heat through, about 1-2 mins. Serve.
