Mediterranean Beef

Mediterranean Beef

Serves 4-6

500g lean braising beef, cubed
frylight
1 onion, sliced
1 clove garlic, crushed
1 red pepper, cubed
1 small aubergine, cut into chunks
2 tbsp red wine
1 x 400g can chopped tomatoes
1 tsp dried mixed herbs
150ml water or stock
2 med courgettes, cut into chunks
salt & pepper.

Preheat oven to Gas 3/160ºC/325ºF

Spray a large pan with frylight and cook the beef until well browned. Put into casserole dish.

Add onion, garlic, pepper and aubergine to pan.  Stir, cover and cook gently for 10 mins, stirring once or twice until softened. 

Stir in the wine and cook until evaporated, then mix in the tomatoes, herbs and stock.

Season well and bring to the boil.  Pour into the casserole, cover and cook for 1½ hours.

Uncover, stir in the courgettes, re-cover and cook for a further 30 mins, when the meat should be tender and the veg cooked.

Sprinkle with chopped parsley and serve with pasta or new potatoes. (Counting points where appropriate)
