Stuffed Marrow

Stuffed Marrow

6½ pts for Core

1 large marrow
1 medium red green or yellow pepper(s)
1 medium onion
3 clove(s) garlic
2 stick(s) celery
4 oz Tesco Whole Button Mushrooms
2 medium egg(s) (2½pts)
100 g light mozzarella cheese (6½ pts)

Halve the marrow, scoop out seeds and discard.
Lightly spray baking tray with frylight put marrow halves on and lightly salt and spray them too.
Put in oven at 200 or gas 6 for 30 - 45 mins until tender.
Meanwhile chop all veg to very small dice and soften in little frylight or water when soft add salt to taste, plenty of black pepper and herbs - transfer to a bowl to cool.
When marrow is tender remove from oven and take out a little more flesh and add to veg in bowl let cool a little more and then add cheese (if using).
Beat eggs and add to the veg and fill the marrow with the mixture.
Return to oven and bake for approx 40 mins.


This can be varied by using any veg of your choice and different herbs. Add more or less mozzarella depending on how many points you want to use.



Stuffed Marrow

Core recipe

1 large marrow washed, sliced in half lengthways & with seeds scooped out.

Filling:
225g lean beef mince or quorn mince
1 onion chopped
1 can chopped tomatoes
1 clove garlic
1 tsp dried mixed herbs
150ml beef stock
1 level tbsp tomato puree
seasoning to taste

Preheat oven to 170ºC

Make a sauce by softening the onions and garlic in stock.  Add mince & simmer until browned. Add herbs, tomatoes & tomato puree and allow to simmer for about 5 mins.


Place 2 halves of marrow on enough foil to 'wrap' them on a baking tray.  Fill 'boats' with mince mixture, cover & bake in oven for about 40mins.

Stuffed Marrow


I browned a packet of beef mince with an onion and 3 garlic cloves. I added a small carton of pasata and the following herbs, oregano, basil, thyme and a little bit of chilli powder and cumin for a little kick optional with a good splash of Worcestershire sauce. I left it to reduce a little and then left to cool down. I mixed through 2 whisked eggs. This helped to stick it all together in the marrow.

I cut the marrow in half length ways and removed the inner core and seeds and sprinkled with salt. After stuffing the two marrow halves I covered in 42g of light cheddar and put in the oven at 180 for 1 hour. You might want to cover it with some foil for a bit in the oven to prevent the top from browning too much
