Leek and Stilton Macaroni Cheese

Serves 4

3 Leeks
300g Mushrooms
Water
250g dried macaroni
100g very low fat fromage frais
90g stilton - diced (10½pts)
1 tbsp wholegrain mustard

Cook the pasta according to packet instructions and set aside. Slice the leeks and put in a large pan with just enough water to cover. Boil until they are soft then remove them with a slotted spoon and allow the water to continue to boil until it is reduced by half.

Mean while dry fry (or use frylight)the mushrooms until they are as cooked as you like them to be! Add them to the reserved leeks.

When the water is reduced by half, add the stilton, mustard and fromage frais and stir until it is all melted together. Then add the cooked pasta, leeks and mushrooms.
