Stir-fried Lamb with Lime and Ginger

Serves 4

4½ pts per serving.

Core:  count 2 pt for the whole recipe for the honey & sesame seeds

675g lean lamb steak, sliced into very thin long strips
1.5 cm fresh ginger, peeled and grated
2 cloves garlic, crushed
2 limes, finely grated rind of 1½, juice of both
pepper
spray oil
1 large red pepper, deseeded and cut into thin strips
10-12 spring onions, cut into lengths
1 tbsp sesame seeds
1 tbsp honey
1-2 tbsp soy sauce

Place the lamb into a shallow bowl with the ginger, garlic, lime rind and half the lime juice.  Mix well, season with pepper and cover and leave to marinade for at least half an hour.

Spray a large wok or non-stick pan with the oil.  Fry the meat in batches, stirring all the time.  Once all the meat is cooked through, (this will only take a few minutes) add the red pepper, spring onions and sesame seeds.  Cook until the veg are tender.  Add the remaining lime juice, honey and soy sauce and cook for 1 minute.


Check seasoning and serve.
