Spicy Beef Curry

Spicy Beef Curry

Serves 4

2 medium onions, finely sliced
3 cloves garlic, crushed
1 green chilli, de-seeded and finely chopped
Spray oil
450g lean casserole beef
2 tablespoon mild or medium curry paste
450g  tomatoes, peeled, de-seeded and chopped
2 tablespoon tomato puree
1/4pt beef stock
salt
freshly ground black pepper

Place the onion, garlic and chilli in a frying pan, spray with spray oil and fry for 5 mins. Transfer to the slow cooker.

Brown the beef in small batches for 3-4 minutes until evenly brown. Put all the beef into the frying pan and stir in the curry paste, tomatoes, tomato puree and stock.

Bring to the boil then transfer to the slow cooker. Season with salt and freshly ground black pepper, cover and leave to cook on HIGH for 6 hours or until the meat is tender.


Serve with boiled rice (remember to add points for this).
