Smoked Gammon & Potato Galette

2 tbsp olive
oil
565g potatoes,
peeled weight
1 medium
onion
225g (8oz)
smoked gammon steak, chopped
salt &
pepper
½ pt skimmed
milk
2 tbsp
freshly chopped parsley
Cover the
base of a loose bottomed 20cm (8") cake tin with foil. Lightly
grease the sides with 1 tsp oil and set aside.
Slice the
potatoes evenly and place in lightly salted water, bring to the boil and cook
for 10 mins. Drain well and set aside.
Preheat oven
to Gas 6/200ºC/400ºF. Finely chop the onion and saute in 2 tsp oil until
softened. Add the chopped gammon and cook for a few more minutes.
Place a layer
of potatoes in the tin, add some onion, gammon and seasoning. Repeat the
layers, pour over the milk and brush with the remaining oil. Stand for 30
mins.
Cook for 45
mins until potatoes are tender and golden brown. Sprinkle with parsley
and serve.
