Bubble & Squeak

Serves 4

Core recipe
Points per serving: 5½

175g carrots, diced
275g savoy cabbage, shredded
175g lean back bacon
2 tbsp olive oil
1 small onion, finely chopped
1 tsp mixed dried herbs
565g potato, cooked & mashed
salt & pepper

Boil carrots for 5 mins and cabbage for 3-4 mins.  Grill the bacon until crispy and cut into bite sized pieces.

Heat the oil in a large non-stick frying pan.  Cook the onion 4-5 mins, add cabbage, carrots and herbs.  Cook 5 mins.

Add potato, flattening it over the pan base.  Cook 6 mins.  Turn over and add the bacon, cook  8 mins more.  Season and serve.
