Savoury Rice with Ham

Savoury Rice with Ham    

Serves 1

Core recipe

50g onion, chopped
50g mushrooms, chopped
1 tsp tomato puree
1 x 200g tin chopped tomatoes
dash of Worcester sauce
25g uncooked brown rice
115g lean cooked ham, diced
salt & pepper

Dry fry the onion and mushrooms in a non-stick pan.  Add the tomato puree and tomatoes, Worcester sauce and rice.  Season lightly and bring to the boil.  Cover and simmer gently until the rice is tender.

Add the ham and raise the heat, cooking until the liquid has been absorbed.  Stir occasionally so the rice does not stick.

Check the seasoning and serve.

I would add some frozen peas and/or sweetcorn to this when I added the ham.  Also maybe some chopped peppers with the onion & mushrooms.  You could also bulk it out with a grated carrot (add with the onion)
