Rice Timbales

Rice Timbales

Serves 2

Core recipe
Points per recipe:  4

40g onion, chopped
40g mushrooms, chopped
150g cooked brown rice (use 60g dry)
40g  cooked carrots, chopped
40g cooked runner beans, chopped
1 tomato, de-seeded and chopped
35g smoked ham or honey roast ham, chopped
1 tbsp of fresh parsley
spray oil

Spray a small pan with spray oil and cook onion and mushrooms until soft; remove from the pan and cool.

Mix all the ingredients together and press into 2 ramekin dishes, lightly sprayed with spray oil.


Serve hot with a selection of green vegetables or cold with salad.
